The freezer and cabinets at our house are just a little too full. Money is tight, as it is in many homes, so I decided to only get the absolute necessities at the grocery store last weekend and live off of the pantries for meals. My grocery store bill this week was only $40. That was a bonus!!
Went I went searching I found we had a plethora of flour tortillas. Usually I turn to quesadilla's but I wanted something a little more special. Then I saw a piece of pork tenderloin that I hadn't used and the idea was born. Shredded Pork Tacos. I cooked it in the slow cooker so the meal was also very easy to put together. It was a hit and now my co-workers are asking me to make it for them.
Shredded Pork Tacos
Meat
2-3 lb pork tenderloin
green chiles ( I used a pint of chopped but you could use fresh or 3-4 small cans)
1 cup green chile sauce ( you could substitute a good salsa like Pace)
garlic powder
onion powder
salt
pepper
1/2 cup chicken stock
Place pork in crock pot. Sprinkle garlic, onion, salt and pepper to taste over meat. Add green chiles and chile sauce. Pour chicken stock in the bottom of crock pot. Cook on low heat for 8-10 hours. At the end of cooking time, take 2 forks and pull pork apart until shredded. Let sit in sauce until ready to serve.

Tomatoes
Onions
Salsa
Assemble tacos by placing meat into a flour tortilla, top with cheese and other above items as desired.
