Oven Fried Jo Jo's

My better half is from Idaho. Potatoes are one of his favorite foods in the world. So when I made a potato dish I learned from my sister Judy, he jumped at the chance to tell me about one of his favorite childhood potato dishes, Jo Jo's.  He gave me "semi" directions and told me to try and fix them. The resulting recipe is from my own tinkering with it. It has become one of our favorite ways to fix potatoes. You can change the spices to suit your own taste.

Jo Jo's

7 or 8 medium Yukon Gold Potatoes
Garlic Powder
Onion Powder
Season Salt
Pepper
Parmesan Cheese
Olive Oil

Cut potatoes into thick fries. Rinse and drain well. Lay potatoes on cookie sheet. Sprinkle liberally with garlic powder, onion powder, season salt, pepper and about 2-3 Tablespoons of Parmesan cheese. Drizzle potatoes with olive oil. With both hands, mix potatoes making sure they are well coated.  Pre-heat oven to 450 degrees. Bake potatoes for approximately 30-40 minutes or until you see them develop a nice brown roasted look, stirring once in the middle of baking.  Serves 3-4.
